My recipe for the most amazing Crispy Baked Garlic Parmesan Potato Wedges came about after noticing how often I ordered this snack every time I dined out. Ingredients
For Crispy Baked Garlic Parmesan Potato Wedges
- 4 large russet potatoes (about 2 pounds / 900g)
- 2 tablespoons olive oil (30ml / 28g)
- 1 teaspoon paprika (2g)
- 1 teaspoon garlic powder (3g)
- 1 teaspoon onion powder (3g)
- 1 teaspoon kosher salt (5g)
- 1/2 cup freshly grated Parmesan cheese (50g)
Potatoes – Russet potatoes contain the highest levels of starch and give the fluffiest baked potato texture. However, Yukon Golds will do fine too.
Parmesan – It’s always best to buy block Parmesan and grate it yourself, as it gives the best melted and browned effect.
For Smoky Chipotle Ketchup
- 1/2 cup ketchup (120g)
- 1 chipotle pepper in adobo sauce, finely minced (10g)

Good potato wedges require quality potatoes.
I always use russet potatoes since they have a lot of starch and turn out to be the fluffiest and crispiest once baked. Of course, if you like a moister potato, you can use Yukon Gold potatoes too.

After rinsing the potatoes, peel them and cut into wedges.
To do that, first cut each potato in half lengthwise. Then divide each half into four wedges. This way, you will end up with eight wedges from each potato.

One more wonderful feature about this recipe is that you can use it for other seasonings. Some of them are: Greek seasoning, Italian seasoning, Cajun seasoning, and even taco seasoning! Just make sure you use the same cooking process.
Pro Tip: To get the tastiest crust, I advise you to buy a Parmesan cheese block and grate it yourself.

Preparing Your Potatoes for Baking
Prepare aluminum foil and lay it on a large baking sheet.
The reason why I always line baking sheets with foil is the fact that it makes clean-up much quicker and easier afterwards.
Lay potatoes in one layer on the sheet, preferably skin side down.
Keep in mind that potatoes should not overcrowd the sheet. This mistake ruins a lot of recipes with potatoes, so be careful with it!
I advise you to put the skin-side down since it will give you a crispy crust on top.
When laid correctly, all of your potatoes should touch the hot pan directly.
You can see that they become nicely coated with seasonings and Parmesan and ready to be roasted.

Roasting Until Golden
Preheat your oven to 425°F (220°C).
Place the tray in the center rack of your oven.
Let the potatoes bake for 20 minutes. As the time passes, you will notice an amazing aroma filling your kitchen.
After 20 minutes, pull the tray out of the oven and flip the potatoes. At this point, you can observe little golden-brown dots developing on the edges.
Let them return to the oven for an additional 10-15 minutes.
As soon as potatoes become golden-brown and crispy, they are ready to serve.
Now, look at how nicely they got roasted with golden Parmesan crusts formed on the outside. Yummy!

Creating Smoky Chipotle Ketchup
While your potatoes are baking in the oven, you can mix a very quick smoky chipotle ketchup.
You only need two ingredients that will take you literally two minutes to mix and prepare.
In a bowl, add:
- 1/2 cup ketchup
- 1 finely minced chipotle pepper in adobo sauce
Stir well until well-blended.
Smoky chipotle ketchup will provide a nice balance between the sweetness and tanginess of ketchup and the smokiness and heat of a chipotle pepper.
The moment you mix it, you will notice a strong smoky aroma.
If you prefer a milder chipotle ketchup, use 1/2 of a chipotle pepper and then increase the number of peppers according to your preference.

Pro Tip: The sooner you make this sauce, the better flavors it will develop. At least 15 minutes in advance.
Serving and Enjoying
After potatoes get nicely roasted in the oven, take them out and leave them on a plate for two minutes.
This is done to allow the outer crust to become crispy again after being touched and flipped over.
Place potatoes on a serving platter.
Sprinkle them with additional Parmesan cheese if you like.
