I decided to make these stuffed bell peppers on a regular weeknight with almost nothing planned. Frankly speaking, I did not expect anything impressive from this dish. However, once it was ready and I pulled it out of the oven, the entire kitchen was filled with the smell of sautéed onions, garlic, and tomatoes combined in the most amazing way possible. The peppers became soft, the cheese started melting, and the filling looked great in one pan. It is one of those easy yet incredibly flavorful and comforting dinners.

  • Cut the upper part
  • Remove seeds and ribs
  • Clean the inside

As a rule, I try to preserve the upper part of peppers since sometimes it helps me put them into the casserole dish so that they can stand steadily. Now you need to put the cleaned and empty peppers into an upright position in the casserole dish and leave them as is.

How to prepare the base mixture for filling

Put some olive oil into a pan and add finely chopped onions. Let them fry for about five minutes until they become soft and somewhat golden. This step requires patience. Otherwise, the filling will definitely lack its distinctive flavor.

Add rice

I would recommend adding only lightly cooked rice. In other words, make sure it remains a bit tough since otherwise, your filling may turn out too liquid. By the way, at this stage, I realized that I mixed the rice quite vigorously and somewhat ruined its shape. However, despite it, the dish tasted great anyway.

At this step, you can experiment a little by adding more salt or spices.

Cheese is the key ingredient.

Finally comes my favorite step – cheese. You should add some mozzarella into the stuffing in order to let it melt while the stuffed peppers are being baked. Moreover, I would suggest adding such ingredients as red pepper flakes or black pepper.

Stuff the peppers

Take some stuffing and pour it into the empty peppers. Remember to fill them thoroughly. Believe me, I usually overfill them when mixing stuffing since the cheese starts melting.

Cover the stuffed peppers with some extra cheese. You may add breadcrumbs with parmesan as well if you wish your stuffing to have a crunchy top layer.

Baking

Bake your stuffed peppers in the oven at 350°F temperature for about 20 minutes. As for the peppers themselves, they should not turn out to be either very soft or too hard. They must retain some shape while being soft inside. The layer of cheese on top should turn slightly golden during baking.
