Garlic Butter Steak Bites – Juicy, Buttery and Done in Less Than 30 Minutes!
When you need something delicious and quick but not just regular fast food, you can try making these garlic butter steak bites. This recipe can save you in case you suddenly decide to cook something but don’t want to spend hours doing it. Soft and delicious hot pan, and that amazing garlic butter melting into your bites. What else do you need?
This was the recipe I made on a busy Valentine’s Day when I needed something quick but tasty. While standing near the stove, trying not to burn my dinner, I was eagerly waiting for the garlic butter smell. From this moment on, I knew that this was the recipe I would come back to again and again.

So, today we will talk about juicy and flavorful steak bites with a garlic butter sauce.
What you will need
Steak marinade ingredients
- 2 ribeye steaks (900g/2lbs), cut into 1-inch cubes
Ribeye steak is the best for this recipe because it h1-inchural marbling and will give you perfectly juicy pieces of steak.
- 2 tbs of Worcestershire sauce (30g)
To give a nice umami flavor and help with the Worcestershire sauce.
- ½ tbs of onion powder (4g)
- ½ tbs of garlic powder (4g)
- ½ tbs of Creole seasoning (4g)
- To give a slight kick and depth of flavor.
- ½ tbs of ground black pepper (3g)
- Salt (about 1 tbs/6g)
Other ingredients for cooking
- 4 tbs olive oil (60ml)
To get that perfectly crispy crust while frying.
- 4 tbs butter (56g)
- For the garlic butter sauce.
- 2 tbs of garlic, finely minced (about 12g)
- To get more flavor from the sauce.
- Several fresh rosemary sprigs
- To get woodsy aromas from the sauce.
Marinate the steak
First, you need to toss your steak cubes with Worcestershire sauce, onion powder, garlic powder, creole seasoning, black pepper, and salt in a large bowl.

Mix the contents thoroughly to coat each piece of steak.
I prefer to coat the steak with my hands, as it speeds up this process a lot.
Leave it to rest for at least 15 minutes. Or if you have time, leave it in the fridge for 1-2 hours.

Pro-tip: Do not cover the steak with the sauce, as you can risk overcooking the meat. The first time I tried this recipe, I used way too much of the sauce, expecting “the more flavor, the better”. The results were quite sad – the meat got very moist and steamed instead of being seared. From now on, I will use only the necessary amount of the sauce.
Sear the steak
Preheat youwill r cast irthe on pan on high fire until it’s nearly smoking hot. You will immediately hear a loud sizzling noise as you place the steak in it.
Now add olive oil and arrange the steak cubes in one layer. Be careful, as the meat will stick to the bottom of the pan.
Leave to fry for 2-3 minutes on each side until you see a dark crust forming and slightly crispy edges. The center of the meat is still juicy at this stage.
You should be able to enjoy an incredible beefy smell with slightly caramelized notes.

Pro-tip: if you notice strong smoke, lower the fire just a bit. High temperature is the key here.
Garlic butter sauce
Put your pan on a moderate fire, add butter, and leave it to melt until it starts foaming. In a couple of minutes, you will enjoy the incredible smell of melted butter.
Now add the minced garlic and roast the garlic and fry for about 1 minute until the garlic changes color to golden yellow and becomes aromatic. At this stage, you should see that the garlic has lost its harsh odor.
Pro-tip: Be extremely careful with your garlic as it cooks really quickly. Because I left the pan for a couple of seconds and found burnt garlic pieces. Now I will never do this again.

Make the dish
Place your steak bites in the skillet and toss them into the melted butter. It should make your steak bites look glossy and soaked with that butter.
Leave to fry for an additional 1-2 minutes to let the flavors sink into the steak. Now, your steak bites are completely soaked in the delicious garlic butter sauce.
At this point, you will see that the pan has stopped sizzling loudly and has been replaced by the gentle butter noise.
Now turn off the fire ahas been nd leave it for a minute to rest.

Mistakes to avoid
Overcrowded pan – this means that the meat does not have time to form a crust. Fry the bites in batches to ensure that they sear well.
Low fire – if it’s not hot enough, the meat will become gray instead of crispy. Always preheat your pan until hot enough.
Burned garlic – garlic burns really quickly. Add it after lowering the fire and constantly stirring it.
Too much marinade – too much liquid leads to water-soaking and tender meat that will steam instead of being seared.
No resting time – if you cut the meat right away, it will lose all the juices. Wait for about a minute after removing it from the fire.
Ways to vary it
You can vary this recipe according to your preferences. To achieve an Asian-style flavor, you can add some soy sauce and honey to it.
If you want to add spice to it, just put some chili flakes and hot sauce together with the garlic.
Another option is to change the herbs: instead of rosemary, you can use thyme. You can even put some parsley in it when you are done.
Storage and serving
These steak bites should be served immediately after frying to enjoy the crispy crust. These bites will look great with the mashed potatoes. You can eat them with rice or other vegetables, but personally, I think that the sauce is best with mashed potatoes.
Keep the leftovers in the fridge in an airtight container for up to 3 days. Reheat in the pan over a low fire with some butter.
I do not recommend freezing this dish since the texture of ribeye steak changes when frozen.
