I decided to cook this meal after years of thinking about meatloaf as one of the most boring dishes possible. My first attempts were not successful since the meat was dry, dense, and not tasty at all. It looked rather like an ordinary hamburger than meatloaf. However, after I stopped mixing everything in my kitchen, the situation became much better. Nowadays, this meatloaf is the most popular among my family, and they ask me to cook it very often, especially with mashed potatoes and fried cabbage.

Cut and Prepare the Ingredients
Finely dice bell peppers and onions. These pieces should be small since we want them to be invisible in the final dish.
While preparing the ingredients, enjoy their sweet aroma.
Pro-Tip: Try to dice vegetables smaller than you think you will need. Small parts will disappear in the meatloaf.
Mix the Meat
In a large mixing bowl, combine the ground beef, finely diced onions and bell peppers, crushed crackers, Lipton onion soup mix, milk, egg, Worcestershire sauce, seasoned salt, ga,rlic and black pepper.
You need to use your hands for this step. This way, you will make the mixing faster and easier.
Your meat should become moist without being watery and soft. Do not try to mix until it becomes completely compact. It means that you have already spent too much time.
I did it the first time I cooked this recipe and got a dense meatloaf which looked like a brick.

Pro-Tip: Cold milk is fine for mixing, but room-temperature eggs would go better.
Bake Your Meatloaf
Line a pan or a sheet pan with parchment paper.
Try to form your loaf loosely on the pan itself, not pressing it into a form. As a result, all the fats will drain off, and browning will appear around the edges of the meatloaf.
Bake the loaf at 350°F (175 °C) for about 45 minutes. While baking, you will be amazed by the aroma. Your kitchen will be filled with odors of onions, beef, and Worcestershire sauce. The top should acquire a slight golden color and become crisp.
Pro-Tip: Try not to pack the meat tightly. Thus, you will preserve its tender texture.
Make a Glaze
While your meat is baking, combine ketchup, barbecue sauce, and brown sugar. As a result, you should get a glossy and slightly viscous sauce.
The barbecue sauce will give additional smoky flavor, while the brown sugar will help to make the surface of the loaf crispy.
Usually, I make an extra portion of it since everyone wants to eat the edge with the glaze.
Brush the Meatloaf with the Sauce
After the loaf is baked, remove it from the oven.
Try to pour away the excessive grease from the top of the meat.
Brush the surface of the loaf with your sauce. Then return it to the oven and bake it another 15-20 minutes. During this time, the sauce will become sticky, glossy, and brown.
The final product should be golden-red. Moreover, the surface should become slightly bubbled.
Pro-Tip: Leave the meatloaf resting for at least ten minutes before you cut it. In this case, juices will stay inside, not running down from each slice.
Cook the Fried Cabbage
At the same time, you should fry the meatloaf.
To do it, put your smoked sausage into the pan with oil and brown it until golden brown.
Put the onion and bell pepper into the pan and fry them.
Then add cabbage and Cajun seasoning, onion and garlic powders, salt, and pepper. Cover the pan and let everything cook for about 5-7 minutes.
Finally, you will have tasty and golden cabbage.

Cook the Mashed Potatoes
Prepare a large pan for the potatoes. Cut potatoes into pieces and pour them into the pan with water. Let them cook in water until ready.
After potatoes will be ready, drain the water from them and start mashing the pieces. Do not forget to add butter and cream to obtain a creamy consistency.
In addition, the skin gives this meal a unique and rustic taste.

Pro-Tips
Do not Overmix the Meat
If you mix meat thoroughly, your loaf will become dense.
Leave Out the Milk
Do not neglect this component since it will make your loaf moister.
Pack the Loaf too Tightly
Loosely shaped meatloaf is much more tender.
Slice Meat Immediately after Baking
Give it some time to cool. Otherwise, your juices will come out, and you will lose them.
Choose Ultra-Lean Beef
Better to use beef with a higher fat content.
Variations
Add Cheese
Mix with 1 cup (113 g) cheddar cheese. It will melt inside and enrich your dish.
Use Ground Turkey
It is a great alternative to meat, and it is easier to bake.
Make It Spicy
Add dicedjalapeñoss and hot sauce.
