I’ve been baking breakfast slider sandwiches for my weekend brunches lately, and for a good reason: not only do they save you tons of prep time, but they are also so incredibly tasty and party-worthy. Once I got sick and tired of assembling individual sandwiches, I came up with my own solution, and these delicious sliders are now my go-to weekend brunch meal idea.

The first attempt at these cowboy sliders resulted in rubbery, dried-up eggs as I overbaked them by mistake. Since then, I learned that you have to pull them out of the oven when the eggs are still slightly soft because they’ll continue cooking. So the eggs turned out perfectly creamy,y and the cheese melted beautifully. And the sliders tasted simply amazing!

Here are the recipes for three easy yet very tasty slider sandwich variations that taste incredible and are so much fun to serve.

How to Make the Cowboy Breakfast Sliders

  • One pack of Hawaiian rolls (12 pieces) – about 12 ounces / 340 g
  • 1 pound of breakfast sausage – 454 g
  • 8 large eggs – about 400 g without shells
  • 2 tablespoons of heavy cream – 30 ml
  • 4 green onions, sliced – about 40 g
  • 6 slices of pepper jack cheese – about 170 g
  • Salt and pepper, to taste

For the Cowboy Butter

  • 1/2 cup of salted butter, melted – 113 g
  • 3 garlic cloves, minced – 9 g
  • 1 teaspoon of chili powder – 2 g
  • 1 teaspoon of smoked paprika – 2 g
  • Smoked paprika will give that deep smoky flavor to the sliders.
  • 1/4 teaspoon of crushed red pepper flakes – 1 g
  • 1 teaspoon of Dijon mustard – 5 g
  • 1 tablespoon of chopped parsley – 4 g
  • Lemon zest
  • A pinch of salt and pepper

For the Bacon Stuffed French Toast Sliders

How to Make the French Toast Custard

  • One pack of Hawaiian rolls (12 pieces) – 12 ounces / 340 g
  • 1 pound of bacon, cooked crispy – 454 g
  • 3 tablespoons of softened butter – 42 g
  • 1/3 cup of brown sugar – 70 g
  • 1/8 teaspoon of cayenne pepper
  • Optional: 1/3 cup of pecan halves – 35 g

For the French Toast Custard

  • 2 large eggs – 100 g
  • 1 cup of half-and-half – 240 ml
  • 1 teaspoon of vanilla extract – 5 ml
  • 1 teaspoon of cinnamon – 2 g
  • 1 tablespoon of maple syrup – 20 ml
  • A pinch of salt
  • To Serve
  • Powdered sugar
  • Maple syrup
  • Melted butter for glazing

For the Eggs Benedict Sliders

How to Prepare the Eggs Benedict

 

  • One pack of Hawaiian rolls (12 pieces) – 12 ounces / 340 g
  • 12 small eggs – about 600 g without shells
  • 8 ounces of deli ham, chopped – 225 g
  • Salt and pepper
  • Chopped chives for garnish

For the Shortcut Hollandaise

  • 1 package of Hollandaise sauce mix
  • 1 cup of milk – 240 ml
  • 1/2 cup of butter – 113 g
  • A few dashes of Tabasco sauce

For the Bonus Brunch Cocktail

  • 1 shot of bourbon – 45 ml
  • 1 shot of Aperol – 45 ml
  • Juice of 1/2 lemon
  • 1 teaspoon of maple syrup – 7 ml

How to Make the Cowboy Breakfast Sliders

Start slicing the Hawaiian rolls horizontally. The sweet aroma of these rolls is always a sign of yummy breakfasts! Place the bottom parts of the rolls onto the baking sheet and leave the top parts for later.

Cook the sausage, pressing it flatly into a baking pan of the same size as the rolls. Bake the sausage in the preheated oven to 375F (190 °C) for about 15 minutes or until the sausage browns and becomes thoroughly cooked.

In a large baking pan, grease the surface with softened butter and crack in the eggs. Break the yolks gently with a knife so that they cover the surface evenly. Pour the heavy cream onto the eggs, season with salt and pepper.

Bake the eggs for about 10 minutes or until they are set but still slightly soft in the center.

Pro Tip: I usually bake the eggs together with the sausage and adjust the cooking times depending on how faralong thee sausagisse when I put the eggs in the oven.

Melt the butter in a small bowl. Stir in the garlic, chili powder, smoked paprika, crushed red pepper, mustard, parsley, lemon zest, salt, and pepper.

Once you start mixing in the garlic, the irresistible smell will surround you in seconds.

I’ve tried this butter many times with different proportions and amounts of ingredients, but now I prefer using just zest since the lemon juice used to ruin its consistency.

How to Assemble and Bake the Cowboy Sliders

Firstly, smear a bit of the cowboy butter on the bottom half of the rolls. Then, place the sausage and the eggs over the bottom parts. Finally, top the rolls with sliced green onions and pepper jack cheese.

Place the top halves of the rolls on top and coat the rolls thoroughly with the butter.

Bake the sliders for about 10 minutes until the toppings melt.

Pro Tip: Trim off the excess sausage sticking out of the roll before adding the tops. And, of course, eat the sausage scraps right away – it’s such a delicious cook’s treat!

Repeat slicing the Hawaiian rolls horizontally. On the bottom half of each roll, spread a generous portion of softened butter and sprinkle it with brown sugar. Add a little pinch of cayenne pepper for some additional zing.

Place the crispy bacon strips on top of the sugar and bake.

The sliders will turn out super moist and sweet-savory, almost like stuffed breakfast candy.

If you’d like to add a bit more crunch to your sliders, sprinkle pecan halves over the sugar.

Be careful not to soak the rolls for too long; otherwise, their tops might become too soggy. Instead of letting the rolls soak for too long, dip them only twice into the custard mixture.

Pro Tip: The sliders’ tops will become slightly puffy. Brush the tops generously with melted butter before serving.

After the sliders are done baking, sprinkle them with powdered sugar and pour maple syrup over the top.

The insides of the sliders remind me of a combination of stuffed French toast and a cinnamon roll. The bacon becomes super tender, while the custard layer turns out so creamy and delicious.

Take a large baking pan and grease it with a bit of softened butter. Place the bottom halves of the Hawaiian rolls inside.

Press the centers of each roll down, creating holes. Fill the holes with chopped ham.

Homemade hollandaise sauce is amazing; however, sometimes it’s easier to use a ready-made version, especially when you need to feed a huge crowd of guests. And it’ll be ready in just five minutes, without any hassle!

Mistakes to Avoid

Overbaking the Eggs

The eggs continue cooking even after you take the sliders out of the oven, so you’d better remove them slightly earlier.

Don’t leave them uncovered when baking, so that the sliders don’t become too brown on the tops, but the inside is properly cooked.

Melt the butter first to ensure that it blends perfectly with all the spices.

Replace the Cheese Type

You can substitute the pepper jack cheese for another type, such as cheddar, smoked gouda, and so on. I highly recommend smoked Gouda as it’ll add an extra flavor and richness to the sliders.

Add Some Fruits to the French Toast Sliders

Adding sliced bananas or berries inside the French toast sliders will make them even tastier and more refreshing.

Create a Spicy Benedict Variation

Use sliced jalapeño instead of the ham and pepper jack cheese in place of the cheddar.
