Ultimate Breakfast Trio – Crispy Hash Browns, Cinnamon Eggy Bread, and Avocado Sourdough Toast
Sometimes, certain breakfasts instantly turn the day upside down for you. This particular breakfast trio is the one that does exactly that. Crispy hash browns with baked eggs, sticky glazed bacon and baked eggs, creamy birch muesli packed with berries, cinnamon eggy bread with stewed apples, and avocado toast with sesame topping is the perfect breakfast spread that makes lazy weekend mornings magical, in no need of visiting any restaurant.
It took me numerous failed attempts of hash browns to finally succeed by squeezing out as much liquid as possible from the potatoes and making sure the pan is really hot. The moment potatoes crackle upon contact with oil, you will know your breakfasts will never be the same. This breakfast spread is crispy, creamy, sweet, savory, and packed with textures. Here is exactly how to achieve it.
Ingredients
For Crispy Hash Browns & Baked Eggs

- 4 medium waxy potatoes, grated (700g / 1.5 lbs)
- 1 medium onion, grated (150g / 5 oz)
- 1 tsp salt (5g)
- 1/2 tsp black pepper (2g)
- 2 tbsp olive oil (30ml)
- 2 tbsp butter (28g)
- 4 eggs
- 1/4 tsp cayenne pepper (1g)
Waxy potatoes – these hold together much better than starchy potatoes and are crispy without crumbling to pieces.
For Glazed Bacon
- 8 slices bacon (250g / 9 oz)
- 1 tbsp olive oil (15ml)
- 1 tbsp butter (14g)
- 2 tbsp brown sugar (25g)
- Pinch of salt
- Pinch of black pepper
Brown sugar – it dissolves in the bacon and creates a delicious caramelized coating.
For Quick Birch Muesli

- 2 cups of live plain yogurt (480g)
- 3 tbsp apple juice (45ml)
- 1 cup of rolled oats (90g)
- 1/3 cup sliced almonds (40g)
- 1/2 cup blackberries (75g)
- 1/2 cup raspberries (60g)
- 1/2 cup sliced strawberries (75g)
Live yogurt – it has a stronger taste and tanginess in comparison with ordinary sweetened yogurt, and gives the muesli lightness.
For Cinnamon Eggy Bread
- 6 thick slices of slightly stale bread (300g)
- 3 eggs
- 4 tbsp of milk (60ml)
- 2 tbsp of sugar (25g)
- 1 tsp ground cinnamon (2g)
- 1 tsp of oil (5ml)
- 2 tbsp of butter (28g)
Slightly stale bread – fresh bread is soaking the mixture too much and becomes soft.
For Stewed Apples

- 2 apples, skin left (300g)
- 2 tbsp sugar (25g)
- 1 tbsp butter (14g)
- 2 tbsp of water (30ml)
The skin should be left on to prevent apples from turning into mush.
For Avocado Sourdough Toast

- 3 slices of sourdough bread
- 2 ripe avocados
- 1 tbsp olive oil (15ml)
- 1 tsp black sesame seeds (3g)
- 1/2 tsp chili flakes (1g)
- Zest of 1 lemon
- Juice of half a lemon
- Salt and pepper to taste
Black sesame seeds – they bring a unique nutty aroma and add extra crunchiness.
Cook Crispy Hash Browns
Begin by grating potatoes and onion in a bowl. The mixture will look quite liquid at the beginning, which is totally expected at this stage. Now add salt, pepper, and olive oil, and mix it well with your hands.
Next, you should get rid of all liquid from the mixture – squeeze it out as much as possible. It may take some time. The first time I cooked hash browns, I skipped this step since I thought it took too long, but it ruined the whole cooking process. This is what will give you a runny texture.
Heat up a large skillet to medium-high temperature and put oil into it. Once hot, put the potato and onion mixture in the skillet. The mixture should crackle. Press it to make it dense.
Dot butter around the perimeter of the mixture. As soon as the butter starts melting, the onions become caramelized, and the kitchen will fill with mouthwatering aroma.
Keep cooking until you get a crispy bottom.
Pro tip: It is very important not to mix up the mixture while cooking. Otherwise, you will not get a crunchy bottom.
Cooking Glazed Bacon
Heat up a skillet to medium temperature and put olive oil, butter, brown sugar, salt, and pepper into it.
Place the bacon in the skillet and caramelize slowly – it will give the perfect result. During the cooking process, sugar starts melting and creating a glossy covering with a smoky and caramelized aroma.
Keep stirring the bacon to prevent it from sticking to the pan. Cooking is finished as soon as you see sticky and golden edges.
Pro tip: Cook bacon slowly. Otherwise, the sugar will burn fast.
Finish cooking and place the glazed bacon on top of the hash brown with the baked eggs.

Cooking Muesli
Combine yogurt and apple juice in a bowl and mix everything together.
Put the oatmeal into the mixture, leaving a third part,t and let them soak for a couple of minutes. As a result, you will have two different textures of oats – soaked ones and dried.
Toast sliced almonds in a pan without oil until they become golden and start smelling nutty.
Finally, combine all ingredients: yogurt mixture, oats, toasted almonds, ds, and fruits.
The contrast between creamy yogurt and crispy nuts gives this breakfast an extraordinary texture.
Pro tip: I would recommend preparing muesli before serving, just like in this case. In that way, the texture will be better and more airy.

Cinnamon Eggy Bread
Begin by mixing all dry ingredients – eggs, milk, sugar, and cinnamon in a separate bowl.
As soon as you finish, you can smell cinnamon in the room.
No wew heat the skillet with oil and butter. Once butter starts bubbling gently, it is high time to fry the eggy bread.
Take slices of bread and put them into a mixture of eggs. Each side should be soaked for about ten seconds maximum.
If you soak the bread longer, it will become soft and fall apart during frying. The right way will give you crispy outside and custardy inside.
Fry both sides for about 90 seconds until golden brown.
Stewed Apples
Heat up a pan to medium heat. Put sugar inside it and caramelize.
After a couple of minutes, add chopped apples to it. Stir gently until they become slightly soft and golden. After a while, add butter to a pan.
Caramelizing butter gives a fantastic smell, which reminds us of the traditional toffee apples.
Add a splash of water to get a glossiness.
Now, put stewed apples on top of cinnamon eggy bread and sprinkle them with powdered sugar.
Pro tip: Don’t forget to leave the skin. It is necessary in order not to lose the structure of apples.

Avocado Sourdough Toast
In a small bowl, mix black sesame seeds, chili flakes, lemon zest, salt, and pepper.
Toast thick slices of sourdough bread until golden brown with crispy edges. The grilling process is better as it brings a smoky aroma.
Peel avocados and put their slices on top of the toast.
Squeeze fresh lemon juice on top of the slices.
Sprinkle it all with the mixture.
The combination of creamy avocados, sourdough bread, and crunchy sesame is amazing!

Mistakes to Avoid
Putting Too Much Water in Potato Mixture
Wet potatoes become steamed, so it is essential to squeeze out as much liquid as possible before cooking.
Using Fresh Bread for Eggy Bread
If you put the fresh bread inside a mixture, it becomes wet and soft. Slightly stale bread works much better.
Frying the Bacon Quickly
If you put bacon into the pan with melted sugar and fry it fast, it will burn. Cooking bacon at medium speed results in caramelized bacon.
Overripe Avocados
It makes a difference in taste and consistency. Choose those fruits that are softer only near the stem.
Using Raw Nuts Instead of Toasted
They won’t provide that warm, nutty aroma that we are expecting. Toast them for about three minutes to get a good taste.
Ways to Change It Up
Adding Sharp Cheddar on Top of Hash Browns
It is nice to sprinkle a portion of sharp cheddar on top of hash browns before putting eggs in it.
Changing Fruits in the Muesli
Almost all types of fruit can go well in the muesli. Usually, I am trying to choose those fruit varieties that are the freshest.
Making the Avocado Toast Even Smoother
It is good to add a small amount of smoked paprika or chipotle powder into the sesame seeds to emphasize that smoky taste.
How to Store and Serve
Crunchy Hash Browns
Crunchy hash browns taste best when served fresh. They can be stored in a fridge for up to three days if you store them properly. To serve, heat a skillet with hash browns in it instead of a microwave.
Birch Muesli
It tastes freshest when cooked just before eating. However, you can store it for twenty-four hours in a refrigerator.
Eggy Bread
Eggy bread will also taste freshest if you eat it the same day it is prepared. It can be refrigerated for up to two days. For reheating, a skillet is the best option.
Stewed Apples
You can keep stewed apples for up to four days in a fridge.
Avocado Toast
Unfortunately, it is impossible to keep the avocados for a long period because they quickly turn yellow.
My perfect pair for this breakfast spread is strong coffee and fresh orange juice. Such a breakfast is very appropriate in the cold winter period.
